The most incredible thing about Mario Kart is how well it still holds up today. I wouldn't have included it myself - 64 is so good that it eclipses everything else for me - but to get it so good first time off was incredible.
Mario Kart Double Dash is my all time favorite incarnation of the series but you have to give it up for the classic SNES version. I spent more hours on that game than probably any other game of that era. Honorable mentions to MK II, Donkey Kong Country and Earthworm Jim of course.

Minecraft isn't for me, I find it utterly boring but I have massive respect for it, to the point where I don't even see it as a computer game. It's basically a 3D rendering programme.
