The official UK charts run from 00.01 Sunday through to Midnight of the following Saturday/Sunday, so it can't peak too soon as every sale before midnight on Saturday will count. The iTunes chart doesn't have any real basis for the actual charts as Apple haven't made public how it's calculated.
